Easy and healthy meals are key for me camping! Tacos and Taco Salad are a great healthy and easy meal! Everyone can make it how they like so it normally fits all of the different tastes for each person in a family. It is a meal that most everyone will like. Who needs Chipotle while camping?

Tacos and Taco Salad:
- Taco meat (cooked and seasoned before the trip). I usually use shredded pastured chicken or grass fed ground beef. You can use ground chicken, shredded beef or shredded pork as well.
- Lettuce
- Shredded Cheddar Cheese
- Canned black olives (I crush them up with my hands for an easy way to make them small)
- Beans (canned or cooked fresh at home) - Pinto beans or Black Beans
- Rice
- Tomatoes
- Guacamole (I love the individual ones at Costco as we eat this with lunches as well)
- Sour Cream
- Bragg's Organic Vinaigrette Dressing and Marinade (this is the healthiest salad dressing I have found that can be bought)
- Salsa
- Corn
- Cilantro
- Sauted onions and bell peppers
- Organic Blue Chips or other Organic Tortillas Chips
- Organic Corn Tortillas
- Mission gluten-free flour tortillas (these are not too healthy, but super yummy)
*Serve this how you want it, with what you want. Make it as a salad and eat it with organic tortillas chips or get corn or flour tortillas and make it with the tortillas. Such a nice and easy, healthy meal to make and bring camping. Who needs Chipotle while you are camping?
