Taco Soup

​We love tacos and taco salad​.  I like to make 3-5 lbs of taco meat at a time.  In order to change it up after we have this for one or two meals, I like to make a soup out of all the leftovers, especially when it is cold out.  Tacos with homemade cassava tortillas, taco salad and taco soup are perfect to take on a camping trip.   Make tacos or taco salad one night and then when cleaning up mix it all together and make taco soup out of it all the next night.  It is a snowy and cold day here today and we had this for lunch.  It was delicious and everyone liked it, which is very hard to do sometimes with 7 people with different likes and dislikes.

​Taco Soup

​- Taco meat (beef or chicken)

- organic corn

​- rice

- beans (black or pinto beans)

- green onions

- olives

- jar/can of diced tomatoes or fresh tomatoes cut up

- cilantro

- mild green chilis

- chicken, beef or vegetable broth

- diced and sauted onions

- anything else that you like with tacos

​This is not a very specific recipe with amounts, but that is the beauty of this recipe.  You use what you have.  I dumped it all into a pot and added enough broth to make it a thick soup.  You could add salsa and sour cream to the soup or when eating it.  I have one that doesn't like those things so I don't add it to the soup.  If the soup is too bland you can add more taco seasoning or hot sauce, etc.  Whatever you like just so it is all things that go with tacos.

When we serve it we put sour cream, salsa, cheese, guacamole and cilantro on it.  It is so yummy!
