Paleo Chocolate Cake Pancakes for Camping or Home

​Our family loves CELEBRATIONS!  Celebrating birthdays or special occasions while camping can be so fun even when you don’t have a regular oven for a cake or cupcakes.

​Our family likes to have special treats, but likes to stay away from the gluten and the sugar.  I saw this gluten free cake mix made with only coconut sugar and decided to try to make pancakes out of it for a very simple way to have a little chocolate cake while camping.  My children loved it!!!  So did I!!!!  In fact this summer we will have a birthday while traveling and I plan to make these for the birthday celebration!  I am going to bring along some spray whipped cream or Simple Mills Vanilla or Chocolate Frosting for the topping, along with some naturally colored m-n-m type candy for the top, mini peanut butter cups and naturally colored gummies.  I think I might have the children decorate their own.   Or I might make a mini 5 layer cake with it.  There are many possibilities to have a fun birthday with fun food while camping.

Dairy free chocolate pancakes

Chocolate Cake Pancakes:

  • ​​​1/3 cup milk, almond milk, coconut milk or water
  • ​1/3 cup melted butter, coconut oil or avocado oil
  • ​​Simple Mills Vanilla or Chocolate Frosting.  I get the 3 pack because it is a much better price for 3 than for 1 and it is really good.  (It is also really tasty on graham crackers.  Yum!)

​Dry Mix All Together

Mix up the liquid ingredients.  If it is chilly out, I like the avocado oil so that I don’t have to add another step of melting the oil.  Add the powder mix and mix it all up with a whisk.  Let it sit for 5 minutes to thicken a bit.  If you want the pancakes thinner add a little more milk.  Make pancakes on your griddle.  I have found with these that it is best to cook at a lower temperature and let them set until the top has bubbles and is starting to become more solid before you turn them, otherwise they turn into chocolate pancake scramble.

  • ​I like these pancakes cooled so they are more the temperature of cake.
  • They are yummy just by themselves, or...
  • ​​​Serve with ​Simple Mills ​Vanilla  or Chocolate Frosting.
  • Bring along some things where children can decorate their own pancakes.

So yummy and simple for special celebrations while camping!

​​Things Children Can Do To Help:

  • ​​​Crack the eggs for you into a bowl (my 4, 6, 7 and 10 year old can all do this).
  • ​Measure the almond/coconut milk (if older can measure it)

Let Them Help

  • ​Mix the wet ingredients and then dry ingredients together with a whisk or spoon.  Littler ones can do this, but my older ones like this too!
  • ​An older one can ladle the batter onto the griddle and be taught when to turn the pancakes.  My 4 year old likes to help with this, but I can’t leave her at the stove where my 7 and 10 year old boys can do this without worry about the stove.

​Equipment Needed to Pack for this Breakfast

  • ​Ingredients for recipe
  • ​Bowl (this is so nice because it saves space and squishes flat) Squish Mixing Bowl, 3-Quart
  • ​Whisk
  • ​Measuring cup for water/almond/coconut milk (these are great for space saving) 8 Piece Squish Cups/Spoon
  • ​Measuring spoon for the oil (these are great for space saving) 8 Piece Squish Cups/Spoon ​​
  • Spoon or small ladle for spooning batter onto griddle
  • ​Stove or  Hamilton Beach 38519 Beach Reversible Durathon Ceramic Griddle, Black If your campsite has electricity, you can bring an extension cord and use a griddle.
  • Griddle for stove if using stove (we have a two burner griddle)
  • Propane for stove
  • Plates, cups, utensils (most of the time for our large family we use paper because it is simpler and saves so much time washing)
  • Dishtowel, paper towels
  • A sharp knife or scissors to open the mix
  • A pan to put the pancakes in to keep warm if not serving them immediately and put a dishtowel over it.
