Best Paleo Pancakes for Camping or Home from Scratch
It is easiest to have instant oatmeal or granola some days camping, but sometimes if you are having a slow morning, it is nice to have a hot breakfast. I have been working on a paleo pancake recipe during this winter that I can make for a quick and healthy breakfast at home and specifically for camping. If you want a similar recipe in a box, you can find this here, but I wanted to develop a similar recipe so that those families like me, that would like to make their own mix and save some money.

This recipe is one that my whole family loves from my 1 year old to my 10 year old to my husband and that is a big feat when there are 7 people with different tastes. These got thumbs up from everyone!
They are more like a crepecake we like to call them because they are smooth and thinner more like a crepe than like a big fluffy pancake. Something I love is that these pancakes also cook quickly and are ready soon! Even then, if you serve them straight off the griddle you will have trouble keeping everyone’s plates full if they disappear as quickly as they do with my family.
Paleo Pancakes from Scratch:
To do at home before you leave:
Mix together:
- 3 cups Almond flour
- 3 cups Arrowroot powder (can also use Tapioca powder)*
- 1 1/2 cups Coconut flour
- 2 T. baking powder
- 1/8 t. sea salt
- optional 1/2+ cup of chia seeds (I love adding these to it)
- optional 1/2 c. of coconut sugar (but good without it)
Make the mix before you go and store it in ziplock freezer bags of how much you want per meal. For our family of 7 we would double this recipe. One recipe makes about 20, 3 inch pancakes.
*Arrowroot powder and Tapioca powder is the same as Arrowroot flour and Tapioca flour.
How I Store My Paleo Pancake Dry Mix at Home
At the Campsite:
- 2 1/2 cups dry ingredient mix (Add enough mix so that the batter is runny, but will stay in place when put on the hot pan to cook, somewhere around 2 1/2 cups.)
- 5 eggs
- 1 cup Almond milk or Coconut milk
- 2 T. melted coconut oil or butter, or avocado oil works well and you don’t have to melt it
Mix the eggs, oil, almond or coconut milk together and add the dry mix you made at home. Let it sit for about 5 minutes to let the mixture thicken up.
- Our family of 7 needs a double recipe to fill us up.
- Serve with butter and pure maple syrup or applesauce or whatever your favorite pancake topping is.
- We love mixing in frozen or fresh blueberries.
- We love putting fresh strawberries over the top.
- We love them with almond butter, cashew butter or peanut butter and bananas and pure maple syrup.
- Serve right away or put them in a pan (I love these because they are so versatile for any needs in your camping kitchen or regular kitchen) with a lid or towel on top to keep warm. This is the pan you see here that I love for serving most things. (Super Deep Pan)
So yummy and simple, especially on those cool mornings!
- Crack the eggs for you into a bowl (my 4, 6, 7 and 10 year old can all do this).
- Measure the almond/coconut milk (if older can measure it)
- Mix the wet ingredients and then dry ingredients together with a whisk or spoon. Littler ones can do this, but my older ones like this too!
- An older one can ladle the batter onto the griddle and be taught when to turn the pancakes. My 4 year old likes to help with this, but I can’t leave her at the stove where my 7 and 10 year old boys can do this without worry about the stove.

- Bowl (this is so nice because it saves space and squishes flat) Squish Mixing Bowl, 3-Quart
- Whisk
- Measuring cup for water/almond/coconut milk (these are great for space saving) 8 Piece Squish Cups/Spoon
- Measuring spoon for the oil (these are great for space saving) 8 Piece Squish Cups/Spoon
- Spoon or small ladle for spooning batter onto griddle
- Stove or Hamilton Beach 38519 Beach Reversible Durathon Ceramic Griddle, Black
- Griddle for stove if using stove (we have a two burner griddle)
- Propane for stove
- Plates, cups, utensils (most of the time for our large family we use paper because it is simpler and saves so much time washing)
- Butter, pure maple syrup
- Dishtowel, paper towels
- A sharp knife or scissors to open the mix
- A pan to put the pancakes in to keep warm if not serving them immediately. I use one like this and just put a dishtowel over it.
