Our family loves CELEBRATIONS! Celebrating birthdays or special occasions while camping can be so fun even when you don’t have a regular oven for a cake or cupcakes.

Spaghetti is a simple, but great meal to do camping. My trick is to cook the meat before you go and freeze it. It saves you time and you don’t have raw meat in your cooler. Then when on your trip just take it out and heat it up with the spaghetti sauce.
It is easiest to have instant oatmeal or granola some days camping, but sometimes if you are having a slow morning, it is nice to have a hot breakfast. I have been working on a paleo pancake recipe during this winter that I can make for a quick and healthy breakfast at home and specifically for camping. If you want a similar recipe in a box, you can find this here, but I wanted to develop a similar recipe so that those families like me, that would like to make their own mix and save some money.
I love being able to take some of our healthier gluten free meals with us without the tons of carbs, but that is hard sometimes to do especially because I like to be spending time with everyone rather than cooking the whole time. If you don't mind spending some money to make things easier on you and save you time, these are a great alternative to pumpkin pancakes from scratch (If you would like to make them from scratch, check out this post). Making them from scratch is simple, but it is easier to pack a box for breakfast without any preparation before we go. This was a pumpkin muffin mix that I decided I wanted to try to make pancakes with as I liked the ingredients, but pancakes are much easier to make camping on a griddle on your stove than muffins. Good and healthy food is important to us, but simple is also the key for me while camping.
The secret to simple gluten free pancakes camping is found in a box! If you want something already made up, and ready to throw in the car, these pancakes are easy, healthy and tasty. All of my children liked them. (If you prefer to make them from scratch check out this post.)
We love Indian Stew because everyone can make their meal how they want it and can be creative with it. Fun to see all the chefs coming up with what they like. Little ones will need help, but older ones will have fun making this meal. Originally when we started eating this it was the basic hamburger meat, onions, carrots, celery and potatoes with ketchup, mustard, salt and worshestire sauce. Now we have expanded to more seasonings and things to add to it.
